This has become an unsaid tradition for Thanksgiving and Christmas Dinners. Aunt Cindy's Peppermint Pies, Garlic Mashed potatoes, dressing and my ever changing salads, including caprese salad.
This pie is one of the best and easiest I've ever seen, I promise this will not disappoint.
Recipe for 1 pie:
- 1 envelope plain gelatin
- 1/4 c. cold water
- 1/2 c. heavy cream, plus 1-1/2 cups heavy cream, whipped
- 8 ounces ( I use a little more) soft mint candy (the best is Bob's Sweet Stripes, it looks like a puffy ball and is individually wrapped in a plastic container with lid)
- 1 prepared Oreo pie crust (my oldest nephew likes a regular graham crust or you can use chocolate)
- Crushed peppermint candies, for top (take out of individual wraps, put in plastic bag, and take outside on concrete and pound with a rubber mallet or meat tenderizer)
Soften the gelatin in water and set to the side. Add 1/2 cup of the heavy cream in a small saucepan with the candies and cook over low heat until candy melts. Add gelatin mixture and mix well. My family likes it with some gelatin chunks, not completely liquefied. Let cool and fold in whipped cream. Pour into crust, sprinkle with the crushed peppermint candies, put plastic lid back on top and chill thoroughly.
Make two of these, they go fast!

Maureen-I've never seen green soft candies. The best is the Uncle Bobs brand soft puffy balls. You can get them at Wal-Mart, Sams and Walgreens.
Yum that does sound good with the Oreo crust, I love peppermint ice cream too.
