This recipe was given to me by a friend, and I tweaked the ingredients a little bit. This soup is always a huge hit. You can adjust the broth, garlic and tomatoes to your liking. Add more broth for more soup.
Ingredients
1/2 stick Butter
1-2 T. Garlic (minced)
2 cans (14.5 oz.) Italian style stewed or diced tomatoes
4 cans (14.5 oz.) chicken broth
1 Bag frozen cheese tortellini
1 Bag fresh spinach or 1 box frozen spinach (thawed and drained)
1 can (14.5 oz.) small navy or cannelloni beans
1/2 c. fresh Parmesan or pecorino cheese (grated very finely)
Saute butter and garlic, until brown. Add tomatoes, broth, and beans and simmer about 30 minutes. Add tortellini at end after adding spinach. Soup will be done when tortellini has risen to top. Don't let tortellini get too mushy and start coming apart. Serve in individual bowls and top with grated cheese. Serve with french bread.
It's even better heated up for left-overs.
