Crunchy Turkey Salad - Leftover Turkey From Holidays

                                                                                                                                       

 

A great simple recipe for leftover turkey.

It only  makes 2 servings, so you might want to double it.

  • 1 c. cubed cooked turkey breast
  • 1/4 cup seedless red grapes, halved
  • 3 T. chopped celery
  • 4 t. chopped pecans
  • 4 t. chopped water chestnuts

Dressing:

  • 3 T. Mayo.
  • 1-1/2 t. dried minced onion
  • 1 t. red wine vinegar
  • 1/2 t. reduced-sodium soy sauce
  • 1/4 t. ground ginger
  • Dash curry powder

 

In a small bowl, combine the turkey, grapes, celery, pecans and water chestnuts.  In another small bowl, combine the dressing ingredients.  Pour over turkey mixture; toss to coat.  Chill until serving.
