A great simple recipe for leftover turkey.
It only makes 2 servings, so you might want to double it.
- 1 c. cubed cooked turkey breast
- 1/4 cup seedless red grapes, halved
- 3 T. chopped celery
- 4 t. chopped pecans
- 4 t. chopped water chestnuts
Dressing:
- 3 T. Mayo.
- 1-1/2 t. dried minced onion
- 1 t. red wine vinegar
- 1/2 t. reduced-sodium soy sauce
- 1/4 t. ground ginger
- Dash curry powder
In a small bowl, combine the turkey, grapes, celery, pecans and water chestnuts. In another small bowl, combine the dressing ingredients. Pour over turkey mixture; toss to coat. Chill until serving.
